Pre-op Tomato-Basil Soup

Here’s a tasty recipe you might want to try. It only takes 10 minutes to make, and you can have unlimited portions on the pre-op diet. 

Ingredients

1 teaspoon olive oil

1 medium onion, chopped

3 – 4 large cloves of garlic

7 cups of chopped fresh tomatoes (see recipe notes)

1 handful of basil (leaves and stalks are fine – you can use dried basil as well)

1 – 2 teaspoons of salt (add to taste)

1 teaspoon of pepper (add to taste)

Instructions

  • Heat a pan over medium heat and add the oil. When hot, add the onions and garlic and cook for about 1 minute.
  • Add the chopped tomatoes.
  • Continue to cook over medium heat, stirring every few minutes until the tomatoes have broken down and are soft.
  • Remove from heat and add basil, salt, and pepper.
  • Blend until smooth.
  • Serve immediately.
